Fridge Tart

I am a bit of a computer nut, I could not turn this photo. So turn your computer sideways and you will get a cook look.

This was my absolute favorite dessert growing up. When I was in Haiti, I made it for the orphans and everybody smiled. It was great. Enjoy!



You will need...

2 bags of Mothers Coconut COCADA cookies. Or if you can't get them get Vanilla wafers

3 Eggs
3 cups Milk
3 Tablespoons Corn Starch
3 Tablespoons Sugar
1 Tablespoon Vanilla

3 cans Sweetened Condensed Milk
3 Lemons

Set out a 9 x 13 pan

In a heavy bottomed pan pour in milk, corn starch and eggs, whip them together till they are smooth and well blended. Cook on medium to medium low till nice and thick. Watch it like a hawk, so that you do not burn it and stir it the whole time. When it gets cold and sets up it will thicken even more but cook it till it is pretty thick anyway.

Remove from heat and whisk in the sugar and vanilla. Set it in the snow to cool, or the fridge.

Now open those cans of Sweetened condensed milk and lick all the lids. Empty the cans into a bowl and lick out the cans too. Discard the cans. When you lick the lids, don't cut your tongue. One way to get more juice out of each lemon, is to put them in the microwave, one at a time for about 25 seconds. Before you cut your hot lemon, put it in a bowl, because when you cut it in half, the juice will pour out. Squeeze out every drop of juice, even use a spoon to reem it. When you have done this to all the lemons, strain the juice to get the seeds out. It isn't too fun to have them in your Fridge Tart. Mix the juice into the Sweetened Condensed Milk. At first it will look like they are separating but keep mixing. It thickens and mixes up beautifully. Set aside.

Now the Fun starts.

Put down a layer of cookies in your pan. You can pretend that they are little bricks and make cool designs, if you want. Smooth 2/3 rds of your lemon mixture over the cookies. The best way to do this is to drop many big spoonfuls down evenly and then smooth it out, so that you don't disturb the cookies. Don't lick your spoon yet!'

Dollop the Custard mixture over the Lemon one. Then smooth it out, so that it doesn't mess up the previous layer. You can lick the Custard spoon because you are done with it!

Layer on top of these three layers (Cookie, Lemon mixture, Custard mixture) another layer of cookies.

Now dollop the rest of the Lemon mixture on top and smooth it out. You may now lick that spoon!

Almost done...

Crush cookies and sprinkle on top.

Set in Fridge till it is very cold. Share it! Or you will be diagnosed with Type 2 Diabetes.
