South African Pancakes


Ok, I know that I should have a photograph to show you of these, but I don't. Enjoy this one Jacob took of Miriam and Blue on the hay stack!
So...imagine crepes. This is how these should look. These pancakes are such a comfort food for me. When I was growing up, in Rhodesia (now Zimbabwe) and then in South Africa, we ate these fairly often but especially on Sunday evenings. My parents would cook a big pile of them and serve them with the traditional cinnamon and sugar mixture or a multitude of toppings. They included a browned ground beef and onion mixture, ice cream and fruit, curry etc. So they could be served at any time of the day! My children love to get home from school and find them cold in the fridge to snack on. I love them hot with the cinnamon sugar.

South African Pancakes

(For a smaller batch)
1 cup flour
1 1/2 cups water
1 egg
1 tsp Baking Powder
2 Tablespoons oil

(For a bigger batch)
4 cups flour
6 cups water
3 eggs
2 tsp Baking Powder
Salt
1/2 cup oil

Put it in the blender, blend away and you are done.
Oil the frying pan well and, normally, after that first time, you don't need to do it again.

Puddle Perspective



I have never stopped my children from splashing in puddles, unless they are in their church shoes. Neither will I stop my grandchildren, when he was done, we bathed him in a Rubber storage container, we don't have a bath here, and threw all his clothes, shoes included, into the washer and dryer. Xander played and played, sat down in it, pushed the stroller through it, visited with the Zebu, Nyxie and then went back to the puddle. He was enthralled. I was thinking about how we see mud, it can be an inconvenience but what a great way to look at mud, the way Xander does.

It is all about Perspective.

Yesterday, I bought two beautiful Nubian doelings, from an amazing woman out in Moore, ID. She breeds for healthy stock with great udders and production. Her animals were so healthy and well taken care of and she was so lovely to visit with. Need any goats, send me an email and I will give you her name. Each breed on our farm, is thematically named. We decided to name the goats after chocolate. Lady Godiva, our Nubian doe is due to kid-out the end of this month, beginning of next, and the two doelings, born yesterday, are Tansy's Twix (Tansy was her mother) and Sage's Snickers (Sage was her mother's name).

Because it is so cold here, they are in the cabin. Their mother was milked of colostrum and they have been bottle fed, and now are on milk replacer. They get fed round the clock for a couple of weeks and then during the day only. Jacob built me a wonderful box that fits neatly below the woodstove, in it are the puppies, who are toddling now, and the kids. When they are out of their pen, they wear Size 1 diapers, with a hole cut for their tails. I will take photos of them tomorrow and post them. Too darn cute. Today Twix and Snickers started leaping a bit, so acrobatic.

Two of my children made an observation. They said I am happiest when I am not on a diet and when I am playing with all my animals, especially the babies. Let's see, what can I learn from this?

Preparing myself!

Today is April 1st and I prepare myself for all the surprises on Facebook and phone, but especially from my children. They will try all day to catch me in a trick. I think that they live for this day, all year long!


Here is a photo of Harley and Emily's two little puppies. They are three weeks old now and so kissable.

Happy April 1st, Spring is almost in full swing, and that is not an April fools joke, despite the snow, rain and hail Mother Nature has been shaking our way all week!
